An exclusive artisan selection by Michel Rolland & Javier Galarreta from the best Listán Blanco grape casks, organically-aged in the historic ‘Cascos Bodeguero San León, Santa Ana y Miraflores’ dating from 1822 and 1740 in Sanlúcar de Barrameda (Cádiz).
The final blend is decided by Michel and Javier, along with the master winemaker and oenologist. Dry wines, intense yet very fresh, but also elegant. These three sherries from ‘Soleras Olvidadas’ represent the very essence of Sanlúcar de Barrameda.
The ‘Albariza’ white soil and special ‘bota’ casks are the two elements local to Sanlúcar, key to creating the Jerez terroir. Originating from the subregion of Jerez Superior, the ‘Albariza’ white soil, influenced by the Atlantic and the mouth of the Guadalquivir River in front of Doñana National Park, has been designated biosphere reserve status.
The proximity to the sea results in slow ripening, and the moderate temperatures allow for a higher quality. Harvest begins at the end of August, and lasts until the beginning of September.
