Fincas Muñoz Cepas Viejas, as its name indicates, comes from vineyards of the age between 60 and 100 years, owned by the winery. Tempranillo grapes, adapted to the warm climatology of Castilla La Mancha, give a very low yield of clusters and a greater expression and complexity due to the depth of their roots.
The grape was selected by hand, cluster by cluster. After a careful selection, the harvest was subjected to squeezing, having had the stems separated from the grapes and put into steel deposits for the fermentation and incubation of 15 days at a controlled temperature. This wine was created in 20% French and 80% American oak barrels for 12 months at a temperature between 13° and 16°C. After bottling, the wine was kept during a minimum period of 2 months in order to merge the oak and the fruit. The main features are a pretty cherry slightly dark maroon, powerful aroma of candied fruit, very mature, with toasted touches. The wine is rounded in the mouth, powerful, with very ripe spicy black fruit taste, delicious and with good acidity.
