Villa Conchi Brut Organic is a Cava made with classic Catalan grapes trinomial for a Cava: with 30% Xare Lo, other 30% Parellada and, competing the assembly, 30% Macabeo and 10% Chardonnay. All the wines with a definite purpose: the first contributes wine body, the second acidity and lightness, the third fruit and Chardonnay adds its elegance.
Our organically grown old grapes are harvested at night to avoid high temperatures and premature fermentations. They are quickly transported to the winery and refrigerated at 10ºC to avoid the color of the skins dyeing the must. Once the must is pressed and each variety has fermented separately at a constant 16ºC to preserve its primary aromas, the must is blended and bottled along with the base wine, to which the yeast and sugar are added to produce the formation of bubbles. For the second fermentation, the bottles are kept in underground cellars at a constant 15º-17ºC where they are in contact with their lees.
The bright straw colour, with a perfect string of bubbles visually anticipates the elegance that the nose and mouth perceives with its memories of fine lees, dried herbs, slightly floral, with a medium and elegant body.
