Villa Conchi Brut Reserva is a Cava made with the trinomial of classical Cava Catalan grapes with 30% Xarel Lo, 30% Parellada and, finally, 30% Macabeo with 10% Chardonnay. Each of them has a certain purpose: the first contributes the wine body, the second gives acidity and lightness, the third provides fruit and Chardonnay adds its elegance. The harvest was done at night for the grapes to arrive at the wine cellar as fresh as possible. After light pressing, each variety was fermented separately at a constant temperature of 16°C. To preserve its primary aromas, the wine was mixed and bottled with sugar and yeast (tirage process). The crianza period with its lees was performed in the bottle during the 12 months in the underground cellars.
The bright straw colour with a perfect rosary of bubbles, provides visual elegance, appreciated in its smell and taste, with fine lees memories, dried herbs notes, a little floral and with a slightly roasted and elegant touch.
