The term Finca la Quitanilla specifies a wine cellar size that occupies approximate space of a family home garage. This means only a few barrels and some small deposits, where the wine would be stored, could be kept inside, which allows the winegrower to control the quality in a handcrafted mode. This is the way Baigorri works, imbued with the philosophy of calmness and rigour. To be worthy of this rank it is essential to have a very old vineyard. Baigorri owns one, which is 75 years old, located in Rioja Alavesa heart: Samaniego. Working basing on a philosophy of sustainable viticulture and in harmony with Nature.
It is worth highlighting that 2010 harvest is one of the three best harvests in the last decade, which is noted in all De Garage features. Made with 100% Tempranillo, the grapes were selected by hand, cluster by cluster, with a careful selection process, using selection and vibration tables. A long maceration was carried out in wood tubs. Once the alcoholic fermentation was completed, the wine was transferred to the pressing stage in a vertical press used especially for this sort. Later the malolactic fermentation was carried out together with its lees in new French oak barrels. The ageing of this wine was controlled by a tasting panel that regularly analyses all the barrels and decides how long the wine will remain in these containers. Finally, the wine was placed in French oak barrels for 22 months.
