Pago de Cirsus O11 Selección is a red wine where complexity, intensity and volume of great southern wines converge. It reminds best Australian red wines because of its intensity and concentration, but without the hyper maduration and tannic astringency caused by the excesses. It is an outstanding wine of this winery, since not every year they are valid for bottling. The vineyards are chosen from 210-metre high lands, the lowest of the property and with the lowest yields, only 3,500 kg per hectare and 1.25 kg per grape stock. The chosen varieties are Tempranillo and Syrah, from which all aromatic potential has been extracted, within the context of jam features without the slightest hint of raisin appearance, despite its clusters strong maturation due to the climate.
The grape was selected by hand, in 15 kg boxes, cluster by cluster, per yard and variety. Cold maceration was carried out at 5°C during first 24 hours, later it was fermented in French oak tubs and aged for 12 months in new oak barrels from Allier.
The aim of this red wine is to emphasize black fruit jam features against/over smoked oak maintaining its creamy and toasted personality. The colour is slightly intense cherry, with a wild black berries aroma, combined with spicy notes and the memories of cedar and pipe tobacco. In the mouth it is full, fleshy, intense with silky and warm tannins.
